Cooking steak in a carbon steel skillet


Today, I'm cooking a steak in a carbon steel skillet for the first time. Sadly, my cast iron skillet is still in KC but it does give me the time to test this out. I’m seasoning each side of a ribeye with salt and pepper and I actually just remembered I'm out of garlic. I peeled the garlic that Jovi so graciously gave to me. I set the pan on medium high heat. And, I’m adding some vegetable oil. Cooking the fat side first for 1 minute and then searing each side for 2 minutes. Okay back to my steak I’m lowering the heat to medium and I’m adding garlic, rosemary, thyme and butter. I like my steak medium rare so I’m just cooking each side for an additional minute while basting. Then I’m setting it off to the side to rest for 6 minutes.
