So this is what I like to have with my hotpot. I get a package of fish meatballs and tofu, shrimp and salmon, sliced beef, shiitake mushrooms, green onion, and oyster mushrooms, baby bok choy, napa cabbage, enoki mushrooms. And for the noodles, I get glass noodles and use the ramen noodles from packages I don't really like. And, for the dipping sauce, I just mix garlic, chili oil and some sesame oil.
Then, you can find a bunch of hot pot flavoring blocks or sauce at the Asian grocery store. I typically get 1 mushroom and 1 spicy one. And I only needed about half of these blocks by the way. This was a little bit too much by adding the whole thing. You just add hot water to it and you have your hot pot broth. The prep takes the longest part but after that, you just get to eat.
