How I made my spring roll dipping sauce

I didn't expect so many people to be interested in the dipping sauce yesterday but here it is! I just whipped up something quick with stuff I had at home. I used 2 cloves of chopped garlic and some chopped habanero pepper. You can use whatever pepper you want. I typically use thai chili peppers in my sauce but I don't have any left. Then, I added some chili garlic sauce and chili oil. Next, I added fish sauce and almost equal parts lemon juice. You can also use lime juice.

This is about enough for about 1 person and the beauty about these types sauces is that you can change it to your preference. Just taste it and see what you like. It was a little too salty for me so I added some water and sugar. I used it as a dipping sauce yesterday but today I'm going to use it differently because it's so versatile. I have some leftover noodles that I'm going to heat up. I'm going to chop up some lettuce and cucumber. These are wontons that I have in my freezer at all times. I'm just going to boil some and add them to the dish, pour the sauce over the top and bam! You've got a good noodle dish for lunch.
