So I get asked a lot about these noodles that I use in my spring rolls and they're called Banh Hoi noodles. They are fine vermicelli noodles that have been woven together to create this convenient rectangle shape. I really like using these because they are easy to cook and add to your spring rolls.
The cooking instructions are pretty specific. You have to cook it for exactly 1 minute and 15 seconds in boiling water and they're good to go. You can also make noodle bowls out of it. I like to add protein, greens, and dipping sauce. They're really versatile and you can find them at most Asian grocery stores.
