Using whole fried catfish in spring rolls



Growing up, whenever my family went out to eat at a Vietnamese restaurant, we would always order a bunch of dishes to eat family style. My favorite was when we ordered a whole fried catfish to use in spring rolls. You just wet the rice paper and then add noodles, greens, carrots, and you just break off pieces of the fish to add to your rice paper. And then we would request a couple of different fish sauces to dip it in. My brother and I would always fight over who got the fish eyes, and I would always eat like four to five and be uncomfortably full when we left the restaurant.
