What I did with my leftover cajun butter sauce


I had some leftover Cajun butter sauce from my lobster video. So, I thawed some frozen shrimp and scallops I had in my freezer. I separated the potatoes and eggs from the solidified sauce and then added it to a pan. I added some more fresh garlic and butter to make sure I had enough to cook everything and this container says chili powder but it's actually my homemade Cajun seasoning. I put it all in this empty container and I'm adding some more to this mix. Then I added the shrimp and tried to guess when I should flip them. When it was time, it was a little time consuming to flip them over one by one but all good things come with time. Right? Is that how that goes?


At this point I was wondering if I should remove the shrimp before adding the scallops so they wouldn't overcook. But my laziness won out and I moved the shrimp to make room for the scallops. Then, a little more Cajun seasoning for good measure. After that cooked for a few minutes, I re-added the leftover eggs and potatoes and lastly I added some dried parsley and it was good to go. The only thing I would change is that I should have added the scallops earlier. They took a lot longer than expected. But, it was still pretty good. And, it was neighbor approved.
