So a couple weeks ago, I tried spam with sugar and it tasted really good. And so many of you had other suggestions for me. One of them being sriracha and sugar. I love sriracha so I thought I'd give it a try. I sliced some spam and added sriracha. Next, I dusted the spam with some salt, I mean sugar. Then, patted it into the meat because it seemed like the right thing to do. And I did the same to the other side. I added them to a frying pan and honestly, when people tell me to caramelize something, I'm not sure how to achieve that. I'm assuming it's just cooking it until it looks brown. There was a lot of sriracha flying around at this point because it mixed with oil. I'm not even sure if I needed to add oil. The good news is that it smelled really good and I didn't burn them. Bad news is that I'm impatient and I took a bite of the spam while it was still hot. Did I burn the roof of my mouth? Yes. Was it worth it? Yes. This turned out delicious. I think the only thing I would do differently next time is to add some more sugar because it was still a little salty. But it probably didn’t help that I didn't eat it with any rice or noodles. Would you give this a try?
